Caprese Sandwich

We’re turning the classic Caprese salad into a Caprese sandwich! Tomatoes contain a nutrient called carotenoids. Carotenoids are great for brain function! The drizzle of olive oil in this sandwich is also great for brain health. Olive oil is almost all healthy monounsaturated fat. The brain is 60% fat and needs fat to function properly, so olive oil is great for you. Enjoy this tasty sandwich for a delicious lunch!

Ingredients:

  • 2 slices of bread
  • 3 thin slices fresh mozzarella
  • 3 slices fresh tomato
  • Basil leaves, torn
  • Drizzle olive oil
  • Drizzle balsamic vinegar
  • Salt and pepper to taste

Directions:

Lightly toast your bread slices.

Layer cheese, tomato, and torn basil leaves, and drizzle of olive oil, balsamic, salt and pepper between bread slices. Enjoy!
