Black Bean Brownies
The following recipe is sure to satisfy any sweet tooth. Now, don’t get scared about having black beans in your brownies. When the brownies are all baked, you won’t even taste them! The beans are there to add moist texture to the brownie.
Black beans are packed with B vitamins – essential for brain health. Another bonus? The darker the bean, the more antioxidants! Walnuts are the number one nut for brain health. Walnuts contain DHA – a type of omega-3 fatty acid. In other words, your brain will thank you! Now get ready for some delicious brownies!
- 14 oz can black beans – rinse and drain
- 2 eggs
- ¾ cup sugar
- 1 tablespoon skim milk
- ½ cup of cocoa powder
- ½ teaspoon vegetable oil
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon balsamic vinegar
- ½ cup chopped walnuts
Preheat your oven to 350 degrees
Spray a 9×9 inch square pan with baking spray.
Blend together your eggs, beans, cocoa powder, sugar, milk, vinegar, baking soda, baking powder and blend until smooth.
Pour into a bowl and mix in your chopped walnuts.
Pour your batter into the greased pan. Bake for about 30 minutes, or until a toothpick comes out clean.
Cool and cut into squares. Enjoy!
