The Ultimate Brunch

You’ve always heard that breakfast is the most important meal of your day, and plenty of science backs that up. Eating breakfast boosts your brain power, fuels your empty stomach so your metabolism gets going, and eating breakfast is even linked to lower BMI and higher intake of important nutrients that fuel your brain and body.

With the holidays upon us, it’s a great time to sleep in a bit as we enjoy the season. And you can still enjoy making that first meal a great one by creating a healthy, delicious brunch. Here are a few of our favorite ideas to create the ultimate brunch this holiday season.

Eggs
Eggs are always an easy go-to for brunch, and they’re packed with protein and other important nutrients. Gruyere makes plain eggs in the hole beautiful and delicious. And these toasts are filling, healthy, and look great, too. For one serving, you’ll need one piece of whole grain bread, one egg, and about one ounce of Gruyere cheese.

Preheat your oven to 425 degrees. Grab a round cookie cutter and cut a hole in the center of your bread. Place on a baking sheet and toss in the oven for about 5 minutes, flipping halfway through. Take your bread out of the oven and crack an egg directly into the hole of the bread. Sprinkle your Gruyere over the egg. Bake for about 8 minutes, or until the white of the egg is set. Enjoy!

Breakfast Nachos
Love Mexican food? Go Mexican for your brunch with Mexican Breakfast Chilaquiles. Basically, they’re a brunch version of nachos, packed with avocado, eggs, pico de gallo, jalapenos, and cheese. The perfect way to start your day off with a kick!

For one serving, you’ll need one egg, olive oil, one ounce of tortilla chips, sprinkle of shredded cheese, a few slices of jalapeno slices, ¼ avocado, a scoop of pico de gallo, cilantro, and plain Greek yogurt.

First, beat egg with a dash of salt and pepper. Heat your olive oil over medium low heat in an oven-safe skillet. Add your egg and gently scramble until done. Move to a separate bowl.

Preheat your broiler. Set half of your chips in the skillet. Sprinkle with half of the cheese. Top with the remaining chips and cheese, then eggs, and jalapenos. Broil until the cheese has melted.

Remove from oven, and top with avocado, cilantro, and a scoop of Greek yogurt!

Egg Muffins
Create your own egg muffins for brunch. This is a quick and healthy breakfast that you can make ahead of time and grab as you are on the go! The spinach in these egg muffins are rich in vitamin K, lutein, folate, and beta carotene, giving you a brain-healthy boost in the morning. Eggs contain B vitamins, folate, and choline. Not only are these good for brain health, but they will keep you powered through the morning!

You’ll need 12 eggs, ¼ cup chopped spinach, ¼ cup diced tomatoes, ¼ cup feta cheese, salt and pepper, and cooking spray.

First, preheat your oven to 350 degrees. Spray a 12 cup muffin tin with cooking spray. In a bowl, whisk the 12 eggs and season with salt and pepper. Pout the eggs into the muffin tin, about half full. Sprinkle in the spinach, tomatoes, and feta cheese throughout the 12 cups. Bake for 20 minutes, or until set. Enjoy!
